COVID-19 came, is and, well still here. We made it through the initial toilet paper crisis and now some of us are held up together in not so thrilling circumstances. One thing that I “probably deliberately” but will never actually admit to, is losing my mind and buying junk, purely and sinfully sweet delicious junk food. I call them the “survival donuts, honey buns, cookies,” the list can go on, but I’m getting hungry so let’s not. I bought gobs and gobs of it and proceeded to munch my way through this pandemic. Not a wise choice I admit, but my birthday was coming! My husband had made me a promise last year to do keto and stick with it. He did an amazing job at it, lost over 75 pounds!! And all while I stuff my face with carbs. So, this time it’s my turn! I will take on this beast and kill it with him; we’re going keto together! So this is my journey of leaving those sweets and amazingly addictive survival carbs for the end of the world consolation prize. I shall keto on.
I want to say cooking comes easy, but in reality it’s eating that comes easy. I’m a nibbler, a muncher, a picker of prep and of all things yummy. But when you have a family of four home together, all with different meal requirements and needs, keto doesn’t always come easy. My husband and I have two glorious kids who are ten months and six years old. Now try to tell a six year old that they can’t have carbs because mommy and daddy are on a diet, Ha! We all wanna live through this quarantine so let’s not poke the bear. We all eat together but usually the meals are not. So how do we get it together? How do we manage and have healthy happy bellies? Well let’s dive in and find out.
